Memorial day celebration

Today I'm posting this great cookies for Memorial Day. These are super easy to make and decorate. 
You can use the recipe for  sugar cookies (one that you can roll out the dough) or the shortbread recipe (these will be more delicate cookies).




So lets start whit the stars!!! ;)
1. Roll out your dough 1/4 in thick, cut a strip from the middle of your cookie using a knife or pointy spatula. the strip should be pointy in one of the corners because the cookie is going to hang from a glass or a cup
2. Bake and cool your cookies (don't try to decorate them hot because it will be a mess!) 



3. Prepare thin royal icing (almost 10 count royal but for this is better a 20 count ) or melted candy in white, red and blue colors

 4. drizzle the cookies whit the three colors,  the drizzle should be thin lines


5. Finish the decoration before the royal or the candy sets with mini silver dragees or colored sugars




6. Decorate your glasses or cups with the beautiful super easy cookies!!!






7. Enjoy watching your family munching the cookies!

The Best Shortbread Ever

Hello everybody!!!! One Cake a Day is returning after a short break. I was fulfilling my duties for college, and needless to say this end of term was overwhelming. But at last I'm done (at least for this term), and I'm happy and ready to continue my passion here in One Cake a Day. 


In the lasts weeks full of stress and work i was filling at the end of the day (late night) craving for cookies. So I start to look for tasty cookies recipes, but i needed something simple to prepare because i was too tired to mix 800 ingredients and after that wait for 2 hours until the dough had cooled enough to be able to bake and after that i didn't want to wait 15 minutes until the cookies were done! 


And the solution? Shortbread cookies. easy, simple, short waiting time and semi-addictive the best solution after a horrible day pushing technology projects... 


Well then HERE is The Best Shortbread Ever
Ingredients
2 cups butter (softened)
1 cup white sugar
1/4 tsp salt
2 tsp vanilla extract (you can experiment with  almond, rum, orange, lemon)
4 cups all purpose flour
Preparation
Preheat oven to 350 F, cream butter and sugar until fluffy,  stir in the extract, add flour and salt, mix well. 
Chill dough for 30 minutes 
Roll out dough 1/4 inch thick (do not roll very thin or the cookies will over tan)
Bake 8-10 minutes, until the edges are slightly tan.
Cool in cooling grid and enjoy!
In my one of my experiments I used a mold for mini pies and let it bake for 18 minutes ..... 
After a long day of work .....  The Best Shortbread Ever (great with ice tea)

10 Count Royal Icing


Hello! in the last days i have received a lot of questions about the 10 count Royal that used for my angel cookies the here is the recipe 

The edges are in full strength royal icing and tip #2 and the petal interior is in thinned royal

 the recipe for the 10 count Royal Icing is :

1# Confectioners Sugar, 
3 TBS Meringue Powder, 
-6 tbsp warm Water, 
1 tsp clear Vanilla Extract, 


Mix all ingredients , beat for 7 minutes (stand mixer) or 10 minutes (hand mixer). 

To thin down the icing (to fill the petals) you can add water by tablespoons and mix until blend.

Take a spoonful of icing, drop it back into the bowl and count 10 seconds... the icing should smooth itself in those 10 seconds if smoothes in less time you need to add some corn starch to the mix (a little) but if it takes more time you need to add water until it takes 10 seconds to smooth. after that is ready to use.!!!

Angel cookies

Tribute to Romero Britto part 1

Hi! here is my tribute to Romero Britto. This cookie is base on his  "Heart Sculpture" from 2006 






You can do the cookie and here is step by step.
1. Roll out the cookie dough 1/4 inch thick. cut out a circle 5 1/4 inches of diameter. Bake and cool
2. Outline the heart in full strength black royal icing and tip 2
3 Fill the heart with thinned black royal icing


 4. Fill in the heart spaces with red thinned royal icing and immediately pipe the yellow dots  
 5. Outline the cookie in full strength  green royal icing 
 6. Fill in the cookie (outside the heart) in green thinned royal icing
 7. FIll the lower space in light blue thinned royal icing 
 8. immediately pipe the dark blue lines 
 9. with full strength blue royal and tip 2 pipe the curls

Citrus Cupcakes Spring Ready!

This recipe is from Martha Stewart's Cupcakes book but I modified for better results. The recipe allows about 24 cupcakes. (para la version en español mira el post que esta debajo de este)



  • 3 1/2 cups all purpose flour
  • 1 teaspoon coarse salt 
  • 2 cups of oil (moist but the cupcakes will not get tanned) or 4 sticks of butter (tanned cupcakes not as moist) or replace half of the butter for apple sauce (less fat, but rich and tanned cupcakes)
  • 2 cups sugar
  • 3 tablespoon finely grated (lemon, orange and lime) zest (3 tablespoons of each)
  • 1 teaspoon pure vanilla extract
  • 9 large eggs room temperature


  1. Preheat oven at 325F
  2. In a bowl mix flour and salt
  3. In a mixer cream butter and sugar until fluffy / or if you are using oil and sugar until well mixed /  or  butter, apple sauce and sugar until fluffy
  4. Add citrus zests to the mix
  5. reduce mixer speed to medium and add vanilla
  6. Add eggs, beat until everything is incorporated
  7. Reduce speed to low and add slowly the flour and salt mix until everything is incorporated.
  8. Fill the cupcake pan with the mix,  fill each tin  3/4 full (the mix does not have baking powder then is not going to raise a lot so you have to fill the tins 3/4 full! )
  9. Bake for about 20 minutes until a cake tester inserted in centers comes out clean.
  10. pull out the cupcakes from the pan and place them in a cooling rack. let them cool completely before decorating with glaze



Citrus Glaze 


1 1/2 cups confectioner's sugar.
1/4 teaspoon finely grated lime zest
3 tablespoons fresh lime juice



  1. whisk together all ingredients until completely incorporated. place the mix in a decorating bag; poor the glaze over cupcakes tops, garnish with lime zest.

Cupcakes de cítricos, listos para Primavera

Ingredientes

3 1/2 pocillos de harina de trigo
1 cucharadita de sal gruesa
2 pocillos de aceite vegetal o si lo prefiere 1 libra de mantequilla sin sal o reemplace la mitad de la matequilla por salsa de manzana (apple sauce)
2 pocillos de azucar granulada
3 cucharadas soperas de rayadura de limo, lima y naranza (tres cucharadas de cada una)
1 cucharadita de extracto de vainilla
9 huevos grandes a temperatura ambiente.


  1. Precaliente el horno a 325 grados F o 165 centigrados 
  2. En un recipiente mezcle la harina y la sal
  3.  En una batidora mezcle la mantequilla y el azucar o  si esta usando el aceite y el azurcar o si esta usando la salsa de manzana y la mantequilla hasta que se integren y se vean cremosos
  4. Adicione a la mezcla la ratadura fresca de lima limon y naranja 
  5. reduzca la velocidad de la batidora a medio y adicione la vainilla
  6. adicione los huenos y siga batiendo hasta que todo se incorpore
  7. Reduzca la velocida a baja y agregue lentament la harina con la sal
  8. coloque los vasitos de papel en el molde para hornear cupcakes, llene cada uno de los orificios 3/4 de la capacidad (como la receta no llega polvo de hornar los cupcakes no va a crecer mucho entonces debe llenarlos 3/4 para que no queden bajitos)
  9. hornee entre 16-20 minutos hasta que los cupcakes crezcan, inserte un palillo o cuchillo a los centros de los pastelitos y si el cuchillo sale limpio estan listos.
  10. Saque los cupcakes del molde y coloquelos en una rejilla a enfriar.
  11. Decore con glaseado de limon cuando esten frios.
Graseado de limon, lima o naranja.

Mezcle 1 1/2 pocillos de azucar en polvo, 1/4 de cucharadita de ralladura de limon o lima o naranja, 3 cucharadas soperas de jugo de su citrico preferido.  Bata la mezcla hasta que todo se incorpore. coloque la mezcla en una manga o bolsa para decorar y decore los cupcakes con el glaseado y rayadura de limon o lima.
